Ingredients
¼ cup quick cooking oats
¼ cup whole wheat flour
¼ cup toasted wheat germ or flax seed (optional-you can double the whole wheat flour if you don’t have this)
¼ tsp ground cinnamon
¼ cup plus 2 TB honey
1/3 cup dried fruit, such as raisins, chopped dried apricots, or dried cherries
Directions
Preheat oven to 300 degrees. Combine oats, flour, wheat germ, and cinnamon, stir well. Add the honey, and stir until mixture is moist and crumbly. Fold in dried fruits.
Coat an 8-inch square pan with nonstick cooking spray. Pat the mixture into the pan, and bake for 18-20 minutes, until lightly browned.
Cool to room temperature, then cut into bars and serve. Extra bars can be stored at room temperature in an airtight container.
