Pasta Primavera
Makes 4 servings

Ingredients
½ cup chopped broccoli
½ cup yellow bell pepper
½ cup red bell pepper
½ cup chopped red onion
1 medium zucchini, halved and sliced
1 medium yellow squash, halved and sliced
1 package whole wheat rotini pasta
¼ cup olive oil
2 TB chopped garlic
¾ cup parmesan cheese (finely shredded or grated)
2 TB chopped fresh basil.
Preparation
Prepare pasta according to package directions, drain.
In large skillet, heat oil over medium-high heat. Add broccoli, peppers, onion, zucchini, squash & garlic. Salt and pepper to taste. Sauté vegetables until tender, about 8-10 minutes. Toss vegetables with pasta, parmesan cheese, and basil.
Tip: you can also serve with sautéed shrimp or chicken if you’d like.
