Pasta Primavera |

| Ingredients: 1 package whole wheat rotini pasta ¼ cup olive oil ½ cup chopped broccoli ½ cup yellow bell pepper ½ cup red bell pepper ½ cup chopped red onion 1 medium zucchini, halved and sliced 1 medium yellow squash, halved and sliced 2 TB chopped garlic ¾ cup parmesan cheese (finely shredded or grated) 2 TB chopped fresh basil. Prepare pasta according to package directions, drain. In large skillet, heat oil over medium-high heat. Add broccoli, peppers, onion, zucchini, squash & garlic. Salt and pepper to taste. Saute vegetables until tender, about 8-10 minutes. Toss vegetables with pasta, parmesan cheese, and basil. Tip: you can also serve with sautéed shrimp or chicken if you’d like Makes 4 servings. |
