Adjustments for baking

When baking with honey, remember to reduce ¼ cup of any other liquid for each cup of honey used; and to add ½ teaspoon of baking soda for each cup of honey used. Reduce oven temperature by 25ºF to prevent over-browning.

Honey as a substitute sweetener

When substituting honey for granulated sugar in recipes, you can estimate using ¾ cup of honey to replace 1 cup of sugar due to the sweeter, high fructose content of honey. Of course, this replacement formula will need to be adjusted for your particular recipe to get the best results.

Make it easier to work with

When measuring honey, coat the measuring cup with non-stick cooking spray or vegetable oil before adding the honey and it will slide right out.  This will keep your measurements accurate as less honey will be stuck to the walls of the measuring cup.

Honey should never be fed to infants under 12 months of age.
